Chicken liver. It's cheap, easy to find, and stays on the hook pretty well once you learn to "loft it". I've used the catfish nuggets (berkeley, etc. ) or whatever the tackle shops sell and never had any luck, and my fishing buddies have said the same. I also know on a recent trip out, my brother used circle hooks and lost several. That was our first time with those, so could have been a fluke, but it was an issue throughout the evening. I usually fish above dams in slow, deep water. However, that's what's convenient and local, I'm not an expert on what conditions would be ideal.

Ditto on the chicken livers (for channel cats at least.) Muddy/shallow or deep/clear are both good, but muddy/deep is where I've had the best luck for big cats during the day, and clear or muddy shallows are better during the evening. If you try circle hooks, use what seems like a ridiculously large one for the size of fish you're catching - the opening between the point and the shank is what's the critical measure. Otherwise, just use a standard baitholder hook, and lob the liver gently.

i like chicken livers too, but i make 1-2" baitbags with cheescloth and twist ties and let em rot in a platic container in the sun for 3-5 days, the cheesecloth really lets it stick to the hook, and they reek really bad so dont touch em with bare hands, but big channel cats love it.Ive never fished for blues or flat heads, but i believe they prefer live bait like sunfish.
Summer time catfishing is best after from sunset, til sunrise.Bug dope, a lawn chair, radio, and a fishingrod bell for decting night time bites are all handy.good luck

Quite frankly, I think catfish are opportunistic feeders and will eat almost anything you throw at them. Night crawlers, hot dogs, cut up fish of any kind, live baits, and specialized catfish baits have always worked for me.
