You probably need to check to see what is hatching in your area at certain times of the year, but I have had good luck with:
Royal coachman
Caddis Fly (elk hair)
Emergers
and my personal favorite- Bead-Headed Wooly Boogers

Really easy patterns:

San Juan Worm (works best at high cfs)
Ant or Beetle
Any Midges (only thing hard is the small size, but very simple and effecti

Google Charlie Craven, he has a great tutorial on a LOT of flies

The green weenee is a very good fly that is easy to tie and I caught a 20in+ Rainbow on.
