I use small live bream. Another great bait is chicken guts that are several days old. They work great but don't expect people to get close to you for a spell.
bream and perch i guess are the same thing, more accurately they are from the sunfish family (bluegill, green sunfish, pumpkinseed ect ect) those work great if they are caught from the same body of water (helps prevent the spread of introduced species, PLUS they naturally fear catfish making them squirm on the hook as cats get closer) if you want big fish sunfish are a good choice, i would recommend shad, either whole, live or as cutbait, nothing works better IMHO. a trick i like is to liver is to coat it in garlic salt over night, it'll harden up the liver, give it both garlic and salt scent, and stay on the hook better.
My grandfather brought me up on using beef liver it works great and stays on the hook better than chicken livers. I have also had good luck with goldfish.
i guess it depends on what size you want to catch. i've never caught anything huge on liver or stinkbait (biggest about 10 lbs) so those baits are good for eater cats. if you want to wrestle with the big boys, cutbait or whole fish is the way to go. i prefer shad and suckers, they are hardy, will stay on the hook and release a great scent
I fish in the lehigh river and catch catfish every time i go but we only use chicken liver and works really well but ive never tried anything other than that
Take a beef liver put in a gallon pickle jar get a box of Rit turkey red dye and pour it in cover with water put in the frig over night. slice in strips and put it on the hook when it hits the water it will bleed red .Great bait take two hooks open the eye and make a stinger rig .Fish it off the bottom on sandbars great on big blues

I use a 1 inch square of sponge soaked in anise oil and a chunk of Ivory soap an a octopus hook for the big ones. Works like a charm!
