Q:Hey everyone, if there's anyone on here who knows a lot about cleaning/processing game, this question's for you. My brother shot a big doe with his .45 pistol on the last weekend of the late antlerless season. Because it was getting dark, he didn't see it fall, and couldn't find any blood/hair where it was standing. So he waited overnight to look, and found it right away in the morning, he had hit it perfectly and it only went about 100 yards and tipped over. When we went to clean it the insides had a very strong "gamey" smell, even though the bullet hadn't gone into the guts at all. We didn't think too much of it though, and most of the meat itself smelled fine at the time. But later when we cooked some of the hamburger made from that deer, it had an almost overpowering "rancid" smell, and tasted very strong too. My question is, why would it have a taste and smell like that? We've left deer out overnight in much warmer weather than that (it was less than 20 degrees) and it always tasted and smelled fine. We've even left gut-shot deer out overnight and they're usually fine as well.
